Colorado Eats: Toss Pizza in Rollinsville

As I mentioned in this post, when I first moved to the mountains over 5 years ago, there was nothing in Rollinsville except for a handful of homes, one restaurant, and a distillery.

Now, there are some more businesses popping up and I’m so happy to have more small businesses nearby to support!

This is Toss, a wood-fired eatery, one of the new spots in town.

The two friends I was with ordered pizza (which looked and smelled amazing) but I was more in the mood for small plates. I ordered a delicious BLT slider with aioli sauce and a plate of burrata cheese, strawberry jam, pickled radishes, and toasted crostini. YUM!

We got there right before as a bunch of people showed up, so the food delivery was a little slow, but I hear that’s typically not the case.

Either way, we had a delicious time and will be back for more!
