My Favorite Snow Day Breakfast

There’s been a cold snap that moved into Colorado over the night, and everyone here is hunkering down and trying to stay warm.

One of my favorite things to do on a big snow day is to cook a delicious breakfast.

So the night before, I made biscuit dough, and in the morning I popped them in the oven! There’s nothing quite like fresh homemade biscuits right out of the oven.

Homemade buttermilk biscuits

My favorite biscuit recipe is this one. Pro tip: if you don’t have buttermilk on hand (I never do) you can easily make buttermilk by combining 1 cup of milk with 1 tbsp white distilled vinegar (or 1 tbsp fresh lemon juice).

There’s something so cathartic and wholesome about making biscuits from scratch. And if you don’t want to make a whole batch at once, you can freeze the dough to use later!

My favorite way to eat biscuits is with gravy and cheesey scrambled eggs. It hits the spot!
